El An\u00e1lisis de Peligros y Puntos de Control Cr\u00edtico (APPCC) es un est\u00e1ndar internacional que define los requisitos para un sistema de gesti\u00f3n de la seguridad alimentaria.<\/p>\n

El Sistema APPCC ayuda a las organizaciones a identificar sistem\u00e1ticamente todos los peligros que pueden afectar a la seguridad e higiene de los alimentos, estableciendo e implantado mecanismos para controlar que no se sobrepasan los l\u00edmites cr\u00edticos, asociados a cada uno de los puntos de control cr\u00edtico (PCC) establecidos a lo largo de todo el proceso de producci\u00f3n de los alimentos.<\/p>\n

El Sistema APPCC se construye sobre 7 principios:<\/p>\n

    \n
  1. An\u00e1lisis de peligros alimentarios: biol\u00f3gicos, qu\u00edmicos y f\u00edsicos.<\/li>\n
  2. Identificaci\u00f3n de los puntos de control cr\u00edtico: en las materias primas, almacenamiento, procesado, distribuci\u00f3n y consumo.<\/li>\n
  3. Establecimiento de l\u00edmites de control cr\u00edticos y medidas preventivas: por ejemplo, temperatura \u2013 tiempo m\u00ednimos de cocinado de los alimentos.<\/li>\n
  4. Control y seguimiento de los puntos de control cr\u00edtico identificados.<\/li>\n
  5. Establecimiento de correcciones y acciones correctivas.<\/li>\n
  6. Mantenimiento de registros.<\/li>\n
